Savory Mixed Rice Delight

Ingredients:
- 2 cups of uncooked jasmine rice
- 4 cups of vegetable broth
- 1 cup of diced bell peppers
- 1 cup of diced carrots
- 1 cup of frozen peas
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish

Instructions:
- Rinse the jasmine rice under cold water until the water runs clear.
- In a large pot, heat the olive oil over medium heat. Add the diced bell peppers, carrots, and sauté for about 5 minutes until slightly softened.
- Stir in the rinsed rice, garlic powder, onion powder, salt, and black pepper, mixing well for about 2 minutes.
- Pour in the vegetable broth and bring to a boil, then reduce heat to low, cover, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Gently fold in the frozen peas and allow to heat through for another 5 minutes.
- Remove from heat and let it sit covered for a few minutes before fluffing with a fork.
- Serve hot, garnished with fresh parsley.
