Creamy Seafood Chowder

Ingredients:
- 2 cups of seafood mix (shrimp, scallops, and clams)
- 4 cups of fish stock
- 1 cup of heavy cream
- 2 medium potatoes, diced
- 1 medium onion, chopped
- 2 stalks of celery, diced
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil

Instructions:
- Heat olive oil in a large saucepan over medium heat.
- Add chopped onion, diced celery, and minced garlic; sauté until the vegetables are soft.
- Stir in the diced potatoes and cook for a couple of minutes.
- Pour in the fish stock and bring to a boil.
- Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
- Add the seafood mix and cook until the seafood is cooked through, about 5 minutes.
- Stir in the heavy cream, dried thyme, and season with salt and pepper to taste.
- Simmer for another 5 minutes to heat through and meld flavors.
- Serve warm with crusty bread.
