 Creamy Seafood Chowder

Ingredients:

  • 2 cups of seafood mix (shrimp, scallops, and clams)
  • 4 cups of fish stock
  • 1 cup of heavy cream
  • 2 medium potatoes, diced
  • 1 medium onion, chopped
  • 2 stalks of celery, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions:

  • Heat olive oil in a large saucepan over medium heat.
  • Add chopped onion, diced celery, and minced garlic; sauté until the vegetables are soft.
  • Stir in the diced potatoes and cook for a couple of minutes.
  • Pour in the fish stock and bring to a boil.
  • Reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  • Add the seafood mix and cook until the seafood is cooked through, about 5 minutes.
  • Stir in the heavy cream, dried thyme, and season with salt and pepper to taste.
  • Simmer for another 5 minutes to heat through and meld flavors.
  • Serve warm with crusty bread.
