Ingredients:

  • 2 cups of long-grain white rice
  • 4 cups of vegetable broth
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 cup of frozen peas
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of ground cumin
  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro for garnish

Kitchen Tools Needed:

  • pot

  • stirring spoon
  • measuring cup

Instructions:

  • Heat olive oil in a pot over medium heat.
  • Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent and fragrant.
  • Stir in the diced red bell pepper and cook for another 2-3 minutes until softened.
  • Add the rice to the pot and stir to coat it with the oil and vegetables.
  • Pour in the vegetable broth and bring to a boil.
  • Add the paprika, ground cumin, salt, and black pepper. Stir well to combine.
  • Reduce the heat to low, cover the pot, and let it simmer for about 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  • Add the frozen peas to the pot and fluff the rice with a fork. Cover and let it sit for another 5 minutes.
  • Serve warm, garnished with fresh cilantro.
