Ingredients:

  • 1 1/2 - 1 3/4 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1/2 cup mayonnaise  
  • 3 tablespoons sweet chili sauce
  • 1-2 tablespoons Sriracha hot sauce (adjust to your spice preference)
  • 2 large eggs
  • 2 tablespoons all-purpose flour or cornstarch
  • 2 1/2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 3/4 teaspoons kosher salt, divided
  • 1 cup neutral oil, such as vegetable or canola (for pan-frying)  
  • Optional: sliced green onions, sesame seeds, red pepper flakes, hot honey, fresh cilantro, for garnish

Equipment:

  • Mixing bowls
  • Shallow dishes or pie plates
  • Large skillet (for pan-frying) or air fryer or baking sheet
  • Wire rack or paper towels (for draining fried chicken)

Instructions:

  1. Prepare the Bang Bang Sauce: In a large bowl, whisk together the mayonnaise, sweet chili sauce, and Sriracha. Taste and adjust the amount of Sriracha to your desired level of spiciness. Transfer half of the sauce to a smaller bowl for serving/dipping.

  2. Set Up the Breading Station: In a shallow dish, whisk together the eggs, flour/cornstarch, and 1 teaspoon of the kosher salt. In a separate shallow dish, combine the panko breadcrumbs, garlic powder, and the remaining 3/4 teaspoon kosher salt.

  3. Coat the Chicken: Season the chicken pieces with a pinch of salt and pepper. Working with a few pieces at a time, dip the chicken into the egg mixture, then dredge it in the panko mixture, pressing gently to ensure the chicken is fully coated. Place the breaded chicken on a baking sheet.

  4. Cook the Chicken (Choose your preferred method):

    • Pan-Frying: Heat the oil in a large, high-sided skillet over medium heat until it reaches 350°F (175°C). Fry the chicken in batches, being careful not to overcrowd the pan, for 3-5 minutes per side, or until golden brown and cooked through. Drain on a wire rack or paper towels.
    • Air Frying: Preheat your air fryer to 400°F (200°C). Arrange the chicken in a single layer in the air fryer basket (you may need to work in batches). Air fry for 12-15 minutes, or until cooked through and golden brown, flipping halfway through.  
    • Baking: Preheat your oven to 400°F (200°C). Arrange the chicken in a single layer on a baking sheet. Bake for 15-20 minutes, or until cooked through and golden brown.
  5. Toss with Sauce and Serve: Transfer the cooked chicken to the large bowl with the remaining bang bang sauce and toss to coat. Garnish with your choice of toppings (green onions, sesame seeds, red pepper flakes, hot honey, fresh cilantro) and serve immediately with the reserved sauce for dipping.

  • Chicken Thighs: Chicken thighs are more forgiving and remain juicier than chicken breast.  
  • Spice Level: Adjust the amount of Sriracha in the sauce to customize the heat.
